Mango and Lemon Pickle Recipe

Green Mangoes – 500 gms
Lemons – 10
Mustard Oil – 750 ml
Turmeric Powder – 2 tsp
Salt as per taste

For the Masala:
Fenugreek Seeds – 1/2 tsp
Saunf – 2 tsp
Dried Red Chillies – 3
Coriander Seeds – 2 tblsp
Dry Mango Powder – 1/2 tsp
Mustard Seeds – 1 tsp
Jeera Seeds – 2 tsp

1. In a pan, dry roast all the spices and keep aside to cool.
2. Grind them to a coarse powder.
3. Cut the lemons into halves or quarters depending on size.
4. Cut the mangoes into 1/2 inch pieces.
5. Sprinkle salt and turmeric powder.
6. Keep aside covered with a muslin cloth, overnight.
7. Remove all the excess water and place in a clean glass/porcelain jar.
8. Heat the mustard oil till smoking and turn off the heat.
9. Add the spices and cool.
10. Then pour into the glass jar.
11. Cover with a lid and keep in the sun for 10 minutes.
12. Use as desired.
