Garlic Gravy with Vegetables

This is given to new mothers for regaining good health.

Ingredients:
Garlic – 250 gms, peeled and finely chopped
Oil – 3/4 cup
Mustard Seeds – 1/2 tsp
Fenugreek Seeds – 1/2 tsp
Curry Leaves – handful
Onions – 4, finely chopped
Pepper – 1/2 tsp
Tamarind Pulp – 1 cup
Tomatoes – 250 gms, chopped
Turmeric Powder – 1/2 tsp
Sugar – 2 tsp
Salt as per taste
Besan Flour – 1 tblsp, roasted
Red Chilli Powder as per taste
Coriander Leaves – 1 bunch, chopped

Method:
1. Heat oil in a pan.
2. Fry the mustard seeds, fenugreek and curry leaves.
3. Add onions and fry for 20 to 30 seconds.
4. Add garlic and pepper.
5. Fry well.
6. Add 5 cups of water, tomatoes, tamarind pulp, turmeric, salt and sugar to the pan.
7. Cook on low flame till the oil rises to the top and the mixture is well cooked.
8. Mix the roasted besan flour in cup of water and add.
9. Add chilli powder and stir well.
10. Simmer for 5 minutes.
11. Garnish with coriander leaves.
12. Serve hot with rice.
