Parangi Kai Puli Curry

Ingredients:
Red Pumpkin – 500 gms, skinned and cut into 1 1/2 inch cubes
Oil – 2 tblsp
Sambar Onions – 60 gms, sliced
Garlic – 15 cloves, finely chopped
Coriander Powder – 1 tsp
Red Chilli Powder – 1 tsp
Turmeric Powder – 1/4 tsp
Salt to taste
Tamarind Extract – 1/4 tsp
Tomatoes – 2, quartered
Jaggery – 2 tsp
Aniseed – 1/2 tsp

Method:
1. Heat the oil in a kadai.
2. Saute the sambar onions and garlic for a few minutes.
3. Add the coriander powder, red chilli powder, turmeric powder, salt and the red pumpkin.
4. Saute for 5 minutes.
5. Add the tamarind extract, tomatoes and 1 1/2 cups of water.
6. Cover and cook for 10 minutes or till the red pumpkin is half done.
7. Add the jaggery and aniseed.
8. Cook for 15 minutes more.
9. Simmer till the vegetable is completed cooked.
10. Serve hot.
