Bajre Ka Soyta

Ingredients:
Lamb – 1/2 kg
Millet Grains – 1/2 kg
Salt to taste
Water – 6 cups
Ghee – 3/4 cup
Red Chilli Powder – 1/4 cup
Coriander Powder – 6 tsp
Turmeric Powder – 1 tsp
Onions – 4, medium, sliced
Ginger – 1 three inch piece, ground
Garlic Pods – 2 to 3, large and ground
Green Chillies – 20
Green Coriander – 2 tblsp
Ginger – 1 tblsp, julienned
Red Chillies – 5, deseeded and fried

Method:
1. Sprinkle a little water on the millet grains and put aside for 30 minutes.
2. Pound lightly to split the grains.
3. Pass through a sieve to remove the chaf.
4. Boil the lamb with salt and 1 cup of water till it is half done.
5. Heat the ghee in a pan.
6. Add all the dry spices along with the millet.
7. Saute for a while.
8. Add the onion, ginger, garlic, lamb and green chillies.
9. Mix well.
10. Add the remaining water.
11. Let it cook on a low flame till the lamb is tender and the water is absorbed.
12. Garnish with the chopped green coriander, ginger and red chilli shells.
13. Serve hot.
