Ingredients:
Tender Jack Fruit Pieces – 2 cups
Onion – 1 large, chopped
Curds – 1 1/2 cups
Oil – 1/2 cup
Bay Leaves – 1 to 2
Turmeric Powder – 1/2 tsp
Chilli Powder – 1 tsp
Coriander Leaves – 2 tblsp, chopped
Salt to taste
Grind to a Paste:
Garlic – 6 cloves
Ginger – 1 inch piece
Green Chillies – 2 (optional)
Dry roast and Powder:
Cloves – 3
Cardamoms – 2 small
Cinnamon – 1 inch piece
Coriander Seeds – 2 tsp
Cumin Seeds – 1/2 tsp
Method:
1. Pressure cook jack fruit pieces with some salt till soft and set aside.
2. Heat oil, add bay leaves and chopped onion, fry till onion turns brown.
3. Add ginger-garlic paste, stir fry for 1 to 2 minutes.
4. Add chilli powder, turmeric powder and jack fruit pieces.
5. Continue frying for sometime, adding garam masala powder.
6. When masalas are well mixed with jack fruit pieces, add curds beaten smooth.
7. Add half the chopped coriander leaves, cover and simmer for sometime for gravy to form.
8. Add some water if too thick.
9. Remove from fire, garnish with the rest of the coriander leaves.
10. Serve hot with pulao or parathas.
