Apple and Dates Muffin
Ingredients:
Maida – 1 to 1 1/4 cup
Brown Sugar – 1/3 cup
Butter – 2 tblsp, melted
Buttermilk – 1/3 cup
Egg – 1, small
Carrot – 1, small, grated
Apple – 1/2 cup, grated
Dry Dates – 2 1/2 tblsp, seedless, finely chopped
6 cup Muffin tray

For the icing:

Icing Sugar – 3/4 cup
Butter – 1 tblsp, melted
Orange Juice – 1 tblsp

Method:
1. Line the muffin tray with paper cups. Keep aside.
2. Combine the maida and sugar in a bowl.
3. Separately whisk together the butter, buttermilk and egg.
4. Pour into the flour and mix until well combined.
5. Add the carrot, apple and dates.
6. Spoon the mixture into the muffin cups.
7. Place the tray into a preheated oven at 200C/400F and bake for 15 to 20 minutes.
8. Insert a skewer in the center and if it comes out clean it is done.
9. Remove and cool.
10. Meanwhile, mix the icing ingredients in a bowl to a smooth mixture.
11. Top up the muffins with the icing and keep aside till it sets.
12. Store in an airtight container.
