Mixed Vegetable Masala Vadai Recipe

Chana Dal – 1/2 cup
Urad Dal – 1/4 cup
Maida – 2 tblsp
Cabbage – 1/2 cup, finely chopped
Carrot – 1/4 cup, finely chopped
Onion – 2, minced
Ginger – 1/2 inch piece, minced
Green Chillies – 4, minced
Coriander Leaves – 2 tblsp, finely chopped
Curry Leaves – 1 sprig
Roasted Gram – 1 1/2 tsp
Salt as per taste

1. Combine dals, wash well and soak in water for 60 minutes.
2. Drain well and grind to a thick batter, adding about 2 tblsp water.
3. Mix in the remaining ingredients except oil.
4. Heat oil in a kadai.
5. Take a ladle of batter and flatten it into a 2 inch round patty.
6. Gently slip into hot oil.
7. Fry the vadai’s in batches, turning frequently, until golden brown and crisp.
8. Remove and drain on kitchen paper.
9. Serve with coconut chutney.
