Vegetable Paya

Ingredients:
Boiled Vegetables – 1 cup (potato, beans, peas and carrot)
Onion – 1 cup
Coconut Milk – 1 12/ cup
Mint Leaves – 3 tsp
Coriander Leaves – 3 tsp
Ginger Garlic Paste – 2 tsp
Turmeric Powder – 1 tsp
Green Chilli – 5
Salt as per taste
Oil

To Grind:
Cashewnuts – 1/4 cup
Badam – 1/4 cup
Roasted Gram – 1/ cup

Method:
1. In a pan heat oil over moderate heat.
2. Add onion and green chilli.
3. Fry for 30 to 45 seconds.
4. Add ginger garlic paste, mint leaves, coriander leaves and turmeric powder.
5. Fry for a minute.
6. Add the boiled vegetables.
7. Add salt to taste.
8. Grind the cashewnuts, badam and roasted gram using little water.
9. Mix with coconut milk.
10. Add this to the vegetables mixture.
11. Let it boil for some time.
12. Stir from time to time.
13. Garnish with coriander leaves.
14. Serve hot.
15. This can be served with plain rice, dosa or biryani.
