Okra with Onion Recipe

Okra (bhindi) – 500 gms, washed
Vegetable Oil – 3 tbsp
Onion – 1, medium, chopped
Garlic – 1/2 tsp, minced
Ginger – 1/2 tsp, minced
Turmeric Powder – 1/4 tsp
Green Chillies – 1 to 2, chopped
Vinegar – 1 tbsp
Salt to taste

1. Wipe the okra with a cloth.
2. Cut off the tops and discard.
3. Chop into 1” pieces.
4. Heat the oil in a pan.
5. Saute the onion for 2 minutes till transparent.
6. Add the garlic and ginger. Saute for 30 seconds.
7. Add the okra, turmeric Powder, green chillies, vinegar and salt.
8. Cook covered on low heat till the vegetable is tender.
9. Open the lid and stir fry to dry up any liquid.
10. Adjust seasoning.
11. Serve hot.
