Sweet and Spicy Sweet Potato Fries

By Jessica Scott
These oven-baked fries use sweet potatoes cut into thin sticks, coated with olive oil, corn starch and a simple spice mix of paprika, garlic powder, salt and pepper. Baking at a high temperature gives them a golden colour and a satisfying crunch. They come together quickly and need no deep frying, making them a practical choice for a weeknight snack or a side dish.

A straightforward oven-baked snack that delivers real crunch without a deep fryer. Paprika and garlic powder give the fries a warm, mildly spicy flavour that works well with the natural sweetness of the potato.

The corn starch coating and the high oven temperature of 420 degrees are what keep these fries golden and firm at the edges. Without both, the fries tend to turn soft and steamy.

A finishing sprinkle of flat leaf parsley and a little extra salt lifts the whole dish and makes it presentable enough to serve at the table.

About the Recipe

The recipe calls for medium to large sweet potatoes cut into quarter-inch sticks. Keeping the cuts uniform matters because thicker sticks will still be soft inside when the thinner ones are already done.

The olive oil and corn starch are mixed in first before the spices go in, so the coating sticks evenly to every piece.

The fries are baked in two stages: fifteen minutes on the first side, then ten to fifteen minutes after turning. Do not skip the turn. The side resting against the baking sheet needs direct heat to crisp up, and leaving it untouched gives you fries that are golden on top but soft underneath.

Why You Will Love This Recipe

This recipe produces genuinely crispy fries from an oven, which is something many baked fry recipes fail to do. The corn starch forms a thin, dry layer around each stick that crisps up under the high heat.

The spice mix suits sweet potatoes well. They have enough natural sugar that salt alone can leave them tasting a little flat. The paprika and garlic powder cut through that sweetness and give the fries a savoury edge.

Cooking Tips

The most common mistake with this recipe is crowding the baking sheet. When fries are placed too close together, they steam instead of roast and never develop a crispy exterior. Spread them in a single layer with visible space between each stick, and use two baking sheets if needed.

Also mix the corn starch and olive oil in thoroughly before adding the spices. If the starch clumps in one spot, those fries will have an uneven coating and may taste floury in patches.

Top Tips

  • Cut all sticks to a consistent quarter-inch thickness so they cook at the same rate.
  • Do not skip the corn starch. It is what creates the crispy outer layer during baking.
  • Give each fry its own space on the baking sheet. Overlapping fries will turn soft, not crispy.
  • Turn the fries at the fifteen-minute mark. The underside needs direct contact with the hot pan to colour properly.
  • Serve immediately after baking. These fries lose their crispness quickly as they cool.
  • Add the extra salt topping only after baking, not before, so it does not draw moisture out of the potato during cooking.

Serving and Storing Suggestions

Serve these fries straight from the oven while they are still hot and crispy. They work well as a side alongside a burger such as a Sweet Potato and Feta Burger, or as a snack on their own with a dipping sauce of your choice.

These fries do not store well. Once cooled, they turn soft and the texture does not fully return after reheating. Bake only as many as you plan to eat right away.

Nutrient Benefits

Sweet potatoes are a good source of vitamin A, vitamin C and potassium, and they provide dietary fibre. Extra-virgin olive oil keeps the overall fat content lower than deep frying would. This is a lighter alternative to regular deep-fried fries while still being a satisfying snack.

Frequently Asked Questions

Can I use regular potatoes instead of sweet potatoes?

Yes, you can use regular potatoes cut to the same quarter-inch size. The cooking time and method stay the same. Regular potatoes have less natural sugar, though, so the sweet-and-spicy contrast that defines this recipe will be much less noticeable. The fries will taste more like standard seasoned fries, which is still good but a different result.

Why are my fries coming out soft instead of crispy?

There are two likely reasons. First, the fries may have been placed too close together on the baking sheet. When they touch or overlap, moisture gets trapped and they steam rather than roast. Second, the oven may not have been fully preheated. Make sure it is at a full 420 degrees before the tray goes in.

Is the corn starch necessary or can I leave it out?

The corn starch coats the surface of each fry and dries out during baking, which is what creates the crispy outer layer. Without it, the fries will still cook through but the exterior will be much softer. If you do not have corn starch, arrowroot powder works as a substitute in the same quantity.

Can I make these fries in an air fryer?

Yes, an air fryer works well here. Set it to around 200 degrees Celsius and cook for approximately 15 to 18 minutes, shaking the basket halfway through. Air fryers circulate heat more efficiently than a conventional oven, so keep an eye on the fries from about the 12-minute mark.

How do I adjust the spice level if I want it hotter or milder?

The recipe as written is mildly spicy. To increase the heat, add a quarter to half teaspoon of cayenne pepper or red chilli powder along with the other spices. To make it milder, reduce the paprika slightly and skip any additional chilli. Keep the garlic powder and salt quantities as they are regardless of how you adjust the heat.
