Sliced Mango Pickle

Ingredients:
Raw Mango Slices – 1/2 kg (without skin)
Fenugreek – 3 tsp
Turmeric – 1 1/2 tsp
Red Chilli Pepper – 1 1/2 tsp
Mustard Oil – 1/2 cup
Salt – 1/2 cup
Aniseeds – 4 tsp
Onion Seeds – 1 tsp
Glacial Acetic Acid – 3 tsp

Method:
1. Mix the skinned and sliced mango pieces with salt and leave for 8 hours or until they become soggy.
2. Drain the discharged water from the mango pieces and add glacial acetic acid. It will start to shed water again.
3. Mix all the other ingredients to the mango slices separately and pour the mango water mixed with acetic acid over it.
4. Add oil to the mixture.
5. Keep for one week and shake it every other day.

Note: Glacial acetic acid is a concentrate that is used in commercially prepared vinegar (95% water+5% acetic acid).
You will find it at all chemist shops.
