Apple Crumble Muffins

Ingredients:
Maida (Plain Flour) – 1/2 cup
Wheat Flour – 1/3 cup + 1 tblsp
Brown Sugar – 1/4 cup + 1 tblsp, light
Apple – 1, cored, chopped
Butter – 2 tblsp, melted
Egg – 1
Plain Milk – 1/3 cup
Vanilla Extract – 1/2 tsp
Oats (or Muesli) – 1/4 cup
Baking Powder – 1 tsp
Cinnamon Powder – 1 tsp
Nutmeg Powder – a small pinch
Muffin Tray lined with paper cups

Method:
1. Mix maida, wheat flour, cinnamon powder, baking powder and nutmeg powder in a bowl.
2. Add brown sugar and apple pieces.
3. Mix well.
4. Whisk the eggs, milk and vanilla extract in a large bowl.
5. Add the butter and flour mixture.
6. Stir to mix well.
7. In a small bowl, add 1 tblsp sugar, oats and 1 tblsp wheat flour.
8. Using greased palms rub the mixture until it forms coarse crumbs.
9. Pour the batter into the muffin cups.
10. Sprinkle some of the oats mixture on top.
11. Place the tray into a preheated oven at 180C/350F and bake for 20 minutes or until golden brown.
12. Remove and cool before serving.
