Chicken Pineapple Stir-Fry
Rice – 1 cup, cooked
Pineapple – 120 gms, chopped
Pineapple Juice – 1/4 cup
Mixed Vegetables – 225 gms
Chicken Breasts – 225 gms, skinless, boneless, cut into strips
Corn Flour – 1 tsp, mixed with 2 tsp water
Garlic – 1 1/2 tsp, minced
Ginger – 1/4 tsp, grated
Tomato Ketchup – 1/2 tblsp
Cider Vinegar – 1/2 tblsp
Oil – 1 tblsp
Sugar – 1 tblsp
Soy Sauce – 1/8 cup

1. Mix sugar, soy sauce, corn flour water, vinegar, ketchup, ginger and garlic in a bowl.
2. Add pineapple juice and mix well.
3. Heat oil in a frying pan.
4. Add the chicken strips and fry for 5 minutes.
5. Add the mixed vegetables and cook for another 5 minutes.
6. Keep stirring all the time.
7. Add the pineapple mixture and mix well.
8. Simmer for 2 minutes.
9. Transfer to a serving dish.
10. Serve hot with rice.
