Kathirikai Gojju

Ingredients:
Tamarind Extract – 1 cup
Brinjals – 3 to 4, quartered
White Sesame Seeds – 1 1/2 tblsp
Salt as per taste
Sambar Powder – 1 1/2 tsp
Jaggery – 2 tblsp, powdered

For Tempering:
Sesame Seed Oil – 1 1/2 tblsp
Mustard Seeds – 1 tsp
Dry Red Chillies – 4, halved
Urad Dal – 1 tsp
Toor Dal – 1 tsp
Green Chillies – 2, slit
Curry Leaves – 1 sprig

Method:
1. Roast sesame seeds in a pan till they start spluttering.
2. Cool and grind to a fine powder.
3. Heat oil for tempering in the same pan.
4. Add the tempering ingredients and fry.
5. When the mustard seeds start spluttering, add the brinjals and saute for 2 minutes.
6. Add the tamarind extract, salt, sambar powder and jaggery.
7. Cover pan and simmer for 10 minutes till brinjals are tender.
8. Sprinkle powdered sesame seeds and mix gently.
9. Simmer for 5 more minutes till well blended.
10. Serve hot.
