Limes are the true citrus fruit. They have thin, fairly smooth, green skin and a highly aromatic acid flavour. Unlike lemon they grow in tripical regions. Limes originated in India and thereafter, they were taken to the Mediterranean countries. There are basically three varieties of limes. Limes are very high in vitamin C. Freshly squeezed juice of lime makes a refreshing drink. Limes can do wonders for the flavour and can be made into pickles, jams, jellies and marmalade.
