Tuna and Couscous Salad
Ingredients:
Zucchini – 2 tblsp, chopped
Green Peas – 2 tblsp
Raisins – 2 tblsp
Tuna – 100 gms, cut into chunks
Lemon Juice – 2 tblsp
Red Onion – 2 tblsp, chopped
Red Capsicum – 1/2, roasted, skinned, seeded, chopped
Couscous – 1/3 cup
Cinnamon Powder – 1/8 tsp
Coriander Powder – 1/4 tsp
Lemon Zest – 1/4 tsp, grated
Water – 1 cup
Turmeric Powwder – 12 tsp
Cumin Powder – 1/4 tsp
Extra-Virgin Olive Oil – 1/4 cup
Coriander Leaves – 2 tblsp, chopped
Salt as per taste
Black Pepper Powder as per taste

Method:
1. Heat a pan over low flame.
2. Add the cumin powder, turmeric powder, coriander powder, cinnamon powder and water to the pan.
3. Bring to a boil and switch off the flame.
4. Add the couscous to a bowl and add the spiced water.
5. Stir to mix well and cover with a lid.
6. Keep aside for 5 minutes.
7. Add the vegetables, tuna chunks and raisins.
8. Add lemon juice, lemon zest, olive oil and coriander leaves.
9. Sprinkle salt and pepper powder.
10. Serve.
