Smoked Salmon and Wild Rocket Salad

Ingredients:

  • Wild Rocket Leaves – 50 gms
  • Flat-leaf Parsley – 1 tblsp, chopped
  • Spring Onions – 2, finely diced
  • Avocados – 2, large
  • Lemon Juice – 1 tblsp
  • Smoked Salmon – 250 gms

For the Dressing:

  • Mayonnaise – 150 ml
  • Lime Juice – 2 tblsp
  • Rind of 1 Lime – finely grated
  • Flat-leaf Parsley – 1 tblsp, chopped

For Garnish:

  • Flat-leaf Parsley  – few sprigs

Method:

  1. Shred the rocket leaves and arrange it in salad bowls.
  2. Scatter over the chopped parsley and spring onions.
  3. Halve, peel and stone the avocados.
  4. Cut into thin slices.
  5. Brush with the lemon juice and divide between the bowls.
  6. Mix together gently.
  7. Cut the smoked salmon into strips and scatter over the top.
  8. Put the mayonnaise in a bowl.
  9. Add the lime juice, lime rind and chopped parsley.
  10. Mix together.
  11. Spoon some of the mayonnaise dressing on top of each salad bowl.
  12. Garnish with the parsley sprigs.
  13. Serve.
