South Indian Brinjal Rice

South Indian Brinjal Rice
Ingredients:
Rice – 1 cup, cooked
Purple Brinjals – 3 to 4, sliced, soaked for 10 minutes
Onion – 2, medium, finely chopped
Green Chillies – 1, chopped
Garam Masala Powder – 1 tsp
Mustard Seeds – 1/2 tsp
Bengal Gram – 1/2 tsp
Turmeric Powder – 1/2 tsp
Curry Leaves – few
Salt as per taste
Sugar – 1/4 tsp
Oil – 1/2 tblsp

Method:
1. Heat a tblsp of oil in a pan over moderate flame.
2. Add the mustard seeds, green chillies, bengal gram dal and fry till the seeds splutter.
3. Add the curry leaves and fry for 10 seconds.
4. Add onions and saute till transparent.
5. Add the brinjals and cook for a few minutes.
6. Now add sugar, turmeric powder and garam masala powder.
7. Pour 1/4 cup of water and cook till brinjals are tender.
8. Add salt and cook till the water dries up.
9. Keep aside to cool.
10. Once cool, add this to the rice and mix well.
11. Serve warm with papad or raita.
