Bottle Gourd (Sorakkai) Halwa
Bottle Gourd (Sorakkai) – 2 cups, skin removed
Milk – 4 cups
Ghee – 1/2 cup
Sugar – 1 cup
Cashewnuts – 5
Raisins – 1 tblsp
Pista Colour – as required

1. Heat 1 to 2 tblsp ghee in a pan.
2. Lightly fry the bottle gourd pieces.
3. Add milk and allow to boil.
4. Add sugar and mix well.
5. Once the milk starts to reduce add the remaining ghee, cashewnuts, raisins and pista food colour.
6. Stir to mix well.
7. Remove and serve.
