Potato, Beans and Peas Rice

A simple rice dish with Potato, Green Beans and Green Peas.

Ingredients:
Rice – 1 cup
Onion – 1, medium, finely chopped
Beans – 1/4 cup, chopped
Green Peas – 1/4 cup, soaked, drained
Potato – 1/2 cup, chopped
Turmeric Powder – a pinch
Oil – 2 tblsp
Salt as per taste

To Grind:
Sambar Onions (Shallots) – 4 to 5, peeled
Garlic – 2 to 3 cloves
Tomato – 1 small or 1/2 medium
Ginger – 1/4 inch piece, peeled
Coconut – 2 tblsp, grated
Coriander Powder – 1/2 tsp
Dry Red Chillies – 3 to 4
Cashew Nuts – 2 to 3

Method:
1. Grind the ingredients given to a fine paste.
2. Soak the rice for 15 minutes.
3. Heat oil in a pressure cooker.
4. Saute the onions, beans and potatoes for 2 minutes.
5. Add turmeric powder, salt and drained rice.
6. Pour 2 cups of water and stir well.
7. Add the ground paste and green peas.
8. Pressure cook until 1 whistle and remove from flame.
9. Open the lid once the pressure has reduced and stir once.
10. Serve.
