Athikai Sambar (Fig Sambar)

Athikai (Unripe Fig)

Ingredients:
Toor Dal – 1 cup, boiled
Onion – 2, chopped
Green Chillies – 2, chopped
Tomatoes – 4, chopped
Athikai (Unripe Fig) – 1 cup, tender, cleaned, washed, halved
Red Chilli Powder – 1 tsp
Tamarind Extract – 2 tblsp
Coconut – 2 tblsp, grated
Cumin Seeds – 1/4 tsp
Fenugreek Seeds – 1/4 tsp
Mustard Seeds – 1/2 tsp
Oil – 3 tblsp
Curry Leaves – few
Coriander Leaves – few
Asafoetida Powder – little
Salt as per taste
Turmeric Powder – a pinch
Sambar Powder – 2 tblsp

Method:
1. Heat little oil in a pan.
2. Fry the mustard seeds and fenugreek seeds for 20 to 25 seconds.
3. Add the onions, green chillies, tomatoes and saute well.
4. Add the athikais and stir well.
5. Add red chilli powder, 1 cup of water and salt.
6. Add tamarind extract, sambar powder, turmeric powder, asafoetida powder and dal.
7. Grind together the coconut, coriander leaves and cumin seeds.
8. Add to the sambar and gently bring to a boil.
9. Garnish with curry leaves and coriander leaves.
10. Serve hot with rice.
