Puli Kuzhambu


Drumstick – 1, cut into 1 1/2 inch pieces, boiled
Field Beans – 1/4 cup
Yam – 125 gms, peeled, cut into rounds
Tamarind Extract – 3/4 to 1 cup
Sambar Powder – 1 tsp
Turmeric Powder – a small pinch
Salt as per taste
Oil – 1 tsp
Mustard Seeds – 1/4 tsp
Urad Dal – 1/2 tsp
Fenugreek Seeds – 1/8 tsp
Asafoetida Powder – a pinch
Curry Leaves – few, chopped

1. Pressure cook the yam with field beans, turmeric powder and enough water till 2 whistles.
2. Heat oil in a pan.
3. Fry the mustard seeds, urad dal, fenugreek seeds, asafoetida powder and curry leaves for 30 seconds.
4. Add the vegetables, tamarind extract, sambar powder and salt.
5. Bring to a boil and cook till thick.
6. Remove and serve hot.
