Ingredients:
Okra (Lady’s Finger) – 1 kg
Mint Leaves – 2 bunch
Oil – 1 1/2 cups
Onions – 4, finely sliced
Turmeric Powder – 1 tsp
Coriander Leaves – 2 bunch
Green Chillies – 6 to 8
Red Chilli Powder – 2 tsp
Garlic – 3 to 4 tsp, ground
Ginger – 3 to 4 tsp, ground
Salt as per taste
Coconut Milk – 2 cups
Tomatoes – 3 to 4, finely chopped
Coconut – 2 tblsp, ground

Dry Roasted and Ground Together:
Cumin Seeds – 4 tsp
Coriander Leaves – 5 to 6 tsp

For Seasoning:
Dry Red Chillies – 6 to 8
Mustard Seeds – 2 tsp
Garlic Cloves – 10 to 12, peeled
Curry Leaves – 15 to 20

Method:
1. Wash and dry the okras. Remove the stems.
2. Heat oil in a pan.
3. Fry the seasoning ingredients.
4. Add onions and fry till brown.
5. Add turmeric powder, ginger, garlic and saute well.
6. Add cumin powder and coriander powder.
7. Saute well.
8. Add the chopped tomatoes and cook for a few minutes till the tomatoes are well cooked.
9. Once the oil surfaces, add the okras and saute well.
10. Add coconut and mix well.
11. Add mint leaves, coriander leaves, green chillies, chilli powder and salt.
12. Saute.
13. Add 2 cups of water and coconut milk.
14. Simmer on low heat.
15. Remove when there is about 2 cups of gravy left.
16. Serve hot.
