Tomato Fish Curry

Ingredients:
Fish – 1 kg, cut into 1 inch x 2 inch pieces, cleaned
Turmeric Powder – 1 tsp
Salt to taste
Clarified Butter – 1/2 cup
Onion – 1 cup, chopped
Garlic Paste – 3 tsp
Ginger Paste – 3 tsp
Red Chilli Powder – 2 tsp
Black Peppercorn Powder – 1 tsp
Tomatoes – 2, large, chopped

Method:
1. Pat dry the fish, rub in the salt and turmeric powder.
2. Keep aside to marinate for half an hour.
3. Heat the clarified butter in a large saucepan.
4. When hot, add the onions.
5. Sauté until translucent.
6. Add the garlic-ginger pastes, red chilli powder and black peppercorn powder.
7. Fry until light brown.
8. Add the fish and stir gently for 2 -3 minutes.
9. Add the tomatoes.
10. Reduce the heat and cook uncovered till the tomatoes are soft and form a coarse pulp.
11. Cook until the fish is tender and the gravy is thick.
12. Serve hot.
