Ingredients:
Tender Mutton – 500 gms, on the rib
Salt to taste
Water – 1/2 cup
Refined Vegetable Oil – 1/4 cup
Onion – 3/4 cup, finely chopped
Garlic Paste – 1/2 tsp
Ginger Paste – 1/2 tsp
Chilli Powder – 3/4 tsp
Pepper Powder – 1/2 tsp
Turmeric Powder – 1/4 tsp
Lime Juice – 1 tblsp
Cumin Seeds – 1/2 tsp
Cloves – 2
Cinnamon – 2 inch piece
Cardamom Pod – 1

Method:
1. Wash and clean the mutton.
2. Cook on low fire with salt and 1/2 cup water.
3. Drain the mutton and reserve a cup of stock.
4. Heat oil in a skillet, add chopped onion and fry till well browned.
5. Add garlic and ginger paste and fry to a golden colour.
6. Mix chilli powder, pepper powder and turmeric powder with a little water to make a paste and add to the fried ingredients. Fry well.
7. Add the meat and brown well.
8. Pour in the stock and lime juice, reduce het and simmer for 10 minutes.
9. Powder cumin seeds, cloves, cinnamon and cardamom.
10. Add the powdered ingredients to the mutton.
11. When the gravy thickens remove from heat.
12. Serve hot.
