Danthal (Spicy Cauliflower Stems) Recipe

Cauliflower Stems

Cauliflowers – 400 gms, cut into 1 inch stems, soaked in warm water for 5 minutes
Mustard Oil – 1/4 cup
Onions – 2, chopped
Ginger – 1 inch piece, finely chopped
Green Chillies – 2, chopped
Tomatoes – 2, chopped
Salt as per taste
Coriander Powder – 1 1/2 tsp
Cumin Powder – 1 1/2 tsp
Fenugreek Powder – 1/3 tsp
Turmeric Powder – 1 1/2 tsp

1. Heat oil in a pan over medium flame.
2. Saute the onions, ginger and green chillies for a minute or until onions turn golden brown.
3. Add the spice powders and stir for a minute.
4. Add the cauliflower pieces and cook until golden.
5. Pour 1/4 cup of water and add tomatoes.
6. Cover the pan with a lid and cook until all moisture has evaporated.
7. Add salt and stir to mix well.
8. Garnish with coriander leaves.
9. Serve hot with rice or roti.
