Brinjal Pepper Fry

Brinjals
Ingredients:
Brinjals – 4, large, cut into medium size pieces
Onions – 2, chopped finely
Tomatoes – 2, chopped finely
Garlic – 8 to 10 cloves, finely chopped
Ginger – 3/4 inch piece, grated or finely chopped
Sambar Powder – 2 tsp
Pepper Powder – 3 to 4 tsp
Turmeric Powder – 1/4 tsp
Oil – 7 to 8 tblsp
Mustard Seeds – 1 tsp
Cumin Seeds – 2 tsp
Salt as per taste
Curry Leaves – few

Method:
1. Heat oil in a pan.
2. Fry the mustard seeds till it crackles.
3. Add the cumin seeds and fry for 15 to 20 seconds.
4. Saute the onions till translucent.
5. Add garlic, ginger and curry leaves.
6. Add the brinjal and tomatoes.
7. Fry till brinjal pieces turn soft.
8. Sprinkle 2 to 3 tblsp of water and reduce flame to low.
9. Add sambar powder, turmeric and salt.
10. Stir to mix well and cook for a minute or two.
11. Add the pepper powder and mix well.
12. Remove and serve hot with rice.
