Kalde Phaal (Lamb Crumb Chops) Recipe

Mutton Chops – 1 kg
Eggs – 2, beaten well
Red Chilli Powder – 1/4 tsp
Salt – a pinch
Breadcrumbs – 1 1/2 cups
Oil – 1 1/2 cups

For the Marinade:
Ginger Garlic Paste – 3 tsp
Vinegar – 2 tblsp
Coriander Leaves – 4 tblsp, finely chopped
Red Chilli Powder – 3 tsp
Black Pepper Powder – 1/4 tsp
Cumin Powder – 1 tsp
Garam Masala Powder – 1/4 tsp
Salt – 1 1/2 tsp

1. Clean and wash the chops. Keep aside to drain completely.
2. Combine the marinade ingredients and coat the mutton chops with the marinade.
3. Set aside for 3 hours in the fridge.
4. Pressure cook the marinated mutton chops with a little water for 10 minutes.
5. The chops should be tender but firm.
6. Mix the eggs with chilli powder and salt.
7. Dip the mutton chops one by one in the beaten eggs and roll in the breadcrumbs.
8. Shallow fry in hot oil till golden brown.
9. Drain the excess oil.
10. Serve hot.
