Subzi Ke Seekh Recipe

Potatoes – 4
Yam – 500 gms
Cauliflower – 100 gms
Beans – 1/2 cup, finely chopped
Carrots – 1/2 cup, finely chopped
Paneer – 1/2 cup, mashed
Cashewnuts – 4 tbsp, ground
Ginger Paste – 2 tsp
Garlic Paste – 2 tsp
Onions – 1/2 cup, minced
Green Chillies – 1 tbsp, minced
Red Chilli Powder – 1 tsp
Cumin Seeds – 1 tsp, roasted
Green Coriander – 2 tbsp, minced
Salt to Taste
Oil for basting

1. Boil the potatoes and yam in sufficient water until tender.
2. Remove skins and mash finely.
3. Mix together all the ingredients along with mashed potatoes and yam.
4. Knead to stiff dough and keep aside for 30 minutes.
5. Spread the mixture along the length of the skewers to shape into kebabs.
6. Cook in a tandoor/ oven/grill for 10 minutes.
7. Remove, baste with oil and cook for 5 minutes.
8. Remove from skewers and serve hot.
