Knol Khol Tomato Gravy


Knol Khol – 2, medium
Tomatoes – 3, medium
Onion – 1, chopped
Green Chillies – 4, slit
Ginger – 1/2 inch piece, minced
Coriander Leaves – 1 tblsp, chopped
Oil – 3 tblsp
Cumin Seeds – 1/2 tsp

Powdered Masala:
Turmeric Powder – 1/4 tsp
Chilli Powder – 1/2 tsp
Garam Masala – 1/2 tsp
Coriander Powder – 2 tsp
Cumin Powder – 1 tsp
Gram Flour – 1 tsp

1. Pare and cut knol-khol into medium size pieces.
2. Boil tomatoes till soft.
3. Discard water, cool and peel skin and mash tomatoes, set aside puree.
4. Heat oil, add cumin seeds and when done, the green chillies, ginger and onion.
5. Fry till onion turns brown.
6. Add dry masalas one at a time, frying all the time, add tomato puree.
7. Continue to fry for sometime.
8. Add knol-khol pieces, stir fry for 1 to 2 minutes.
9. Sprinkle some water, cover and cook on low heat till vegetable turns soft.
10. Add salt, cook for some more time adding coriander leaves till gravy is well blended.
11. Serve hot.
