Doi Maach / Bengali Fish in Yogurt Gravy
Rohu Fish Fillets – 500 gms, washed
Yogurt – 3/4 cup
Ghee – 1/8 cup
Onions – 1/4 cup, chopped
Black Peppercorns – 3
Bay Leaf – 1/2
Cinnamon – 1/2 inch stick
Green Cardamom – 1
Cloves – 1
Turmeric Powder – 1/4 tsp
Ginger Paste – 1 1/2 tblsp
Red Chilli Powder – 1/2 tsp
Raisins – 1/3 cup
Salt as per taste

1. Combine 1/3 cup of yogurt and turmeric powder in a bowl.
2. Marinate the fish fillets for 30 minutes.
3. Heat ghee in a pan.
4. Saute the fillets till 3/4th done and remove.
5. Keep aside.
6. Add cloves, green cardamom and cinnamon.
7. Fry for 10 seconds.
8. Add ginger paste and onions.
9. Cook till onions turn light brown.
10. Add the remaining yogurt, red chilli powder and sufficient water to cover the ingredients.
11. Add the fillets and simmer for 10 to 15 minutes.
12. Add salt and raisins.
13. Stir to mix well.
14. Serve hot.
