Chocolate Coconut Pound Cake

Ingredients:
Maida – 3 cups
Butter – 1/2 cup, unsalted + extra
Cocoa Powder – 1 cup, unsweetened
Coconut Oil – 1 cup
Sugar – 3 cups + 2 tblsp
Vanilla Extract – 2 tsp
Buttermilk – 1 1/4 cup
Coconut – 1/2 cup, unsweetened, grated
Baking Powder – 1 1/2 tsp
Salt as per taste
Eggs – 2, medium

Method:
1. Mix the maida, cocoa, baking powder and salt in a bowl. Keep aside.
2. Beat the oil, butter and sugar until fluffy, about 5 minutes.
3. Add the eggs, one at a time, and beat for 5 minutes or until it has doubled in volume.
4. Add the vanilla extract and beat again.
5. Now add the flour mixture and buttermilk in batches.
6. Do not over mix.
7. Transfer to a greased baking pan lined with parchment paper.
8. Sprinkle coconut and 2 tblsp sugar.
9. Bake in a preheated oven at 325F/150C for about 60 minutes or until a skewer inserted in the middle comes out clean.
10. Remove and cool for 15 to 20 minutes.
11. Cut into slices and serve.
