Sookha Kabuli Chana (Spicy Chickpeas)

Spicy Chickpeas
Ingredients:
Chickpeas (Kabuli Chana) – 3/4 cups
Garam Masala Powder – 1 tsp
Potatoes – 1, cut into fingers, fried
Soda Bicarb – 1/2 tsp
Tea Bag – 1
Ginger – 1, julienned, fried
Oil – 1/4 cup
Green Chillies – 1
Dry Red Chillies – 1, small
Onion – 1, small, cut into rings
Coriander Seeds – 1 tblsp
Cumin Seeds – 1/2 tblsp
Red Chilli Powder – 1/2 tsp
Pomegranate Seeds Powder – 1 tsp
Amchur (Dry Mango Powder) – 1 tblsp

Method:
1. Soak the chickpeas with soda bicarb overnight.
2. Boil the soaked chana with tea bag over low flame till tender and water dries up.
3. Discard the tea bag.
4. Add all the ingredients except red chillies, green chillies and onion rings.
5. Mix well to combine.
6. Heat oil in a pan.
7. Add the chickpea mixture and stir-fry for 5 to 8 minutes over low flame.
8. Garnish with red chillies, green chillies and onion rings.
9. Serve hot.
