Shrimp and Lemongrass Soup Recipe

A delicious and popular Asian soup with Shrimps and Lemongrass.
Shrimp and Lemongrass Soup
Lemongrass – 1 to 2 stalks, trimmed and cut into 1 inch lengths
Galangal – 2 to 3 slices, fresh,
Shrimp – 125 gms, peeled, deveined
Mushrooms – 1/2 cup, thinly sliced
Fish Sauce – 1 tblsp
Chicken Stock – 1 to 2 cups
Coriander Leaves – 1 tblsp, coarsely chopped
Spring Onions – 1, finely sliced
Green Chillies – 1/2 tblsp, finely sliced
Lime Juice – 1 to 2 tblsp
Kaffir Lime Leaves – 2, torn


1. Combine the lime juice, green chillies, spring onions and 1 lime leaf.
2. Heat a pan over moderate flame.
3. Add chicken stock, lemongrass, galangal and remaining lime leaves.
4. Bring to a boil and cook for 2 minutes.
5. Add the shrimps and mushrooms.
6. Cook for a minute more, until the mushrooms are tender and shrimps are cooked.
7. Add the fish sauce and remove the pan from heat.
8. Transfer to a serving bowl.
9. Add lime juice and stir well.
10. Garnish with coriander leaves.
11. Serve hot.
