Bramley Apple Cake

Apple Cake
Egg – 1, large
Castor Sugar – 110 gms
Butter – 60 gms
Plain Flour – 100 gms
Milk – 60 ml
Baking Powder – 1 1/2 tsp
Bramley Apples – 1 to 2, peeled, cored, sliced
Brown Sugar – 1 tblsp
Roasting Tin – 8×12 inches, greased, floured

1. Whisk the egg and castor sugar till thick and creamy.
2. Combine the butter and milk in a pan.
3. Place over medium flame and bring to a boil.
4. Stir well and pour the egg mixture.
5. Sieve together the plain flour and baking powder.
6. Add to the pan and mix well so that no lumps remain.
7. Pour this mixture into the roasting tin.
8. Arrange the apples over the batter and sprinkle 1 tblsp of castor sugar over it.
9. Bake in a preheated oven at 200C/400F for 15 to 25 minutes until well-risen and golden brown.
10. Remove, cool and then cut into slices.
11. Serve.
