Tomato Kuzhambu

Ingredients:
Tomatoes – 1/4 kg, chopped
Onion – 1, medium, chopped
Turmeric Powder – 1/4 tsp
Oil – 2 tblsp
Coriander Leaves – 1 tblsp, chopped
Salt to taste

For Seasoning:
Mustard Seeds – 1/4 tsp
Urad Dal – 1/2 tsp
Curry Leaf – 1 sprig

Fry in 2 tsp Oil:
Coriander Seeds – 1 tblsp
Cumin Seeds – 1 tsp
Chana Dal – 1 1/2 tblsp
Red Chillies – 2 to 3
Coconut Gratings – 2 tblsp

Method:
1. Fry in 1 tblsp oil the chopped onion to brown, add fried ingredients, chopped tomatoes and grind to paste.
2. To ground masala, add 1 to 2 cups water, turmeric powder and salt, mix thoroughly.
3. Heat 1 tblsp oil, add seasonings and, when done, add ground mixture and chopped coriander leaves and simmer for some time on low heat till gravy is thick.
4. Serve hot with rice with some ghee sprinkled on rice.
