Dry Fruits Pongal

A special recipe for the Pongal festival with dry fruits.

Ingredients:
Raw Rice – 2 cups
Moong Dal – 1 cup
Milk – 2 cups, boiled
Ghee – 1/2 cup
Sugar – 2 cups
Almonds – 1 tblsp, fried in little ghee
Cashew Nuts – 1 tblsp, fried in little ghee
Raisins – 1 tblsp
Walnuts – 2 tsp
Cardamoms – little, fried in little ghee
Saffron Strands – little
Dry Cherries – few

Method:
1. Dry roast the moong dal for a minute or until golden.
2. Combine this with the rice and wash well.
3. Transfer to a pressure cooker and pour 7 to 8 cups of water.
4. Place it over low/medium flame and cook until 3 to 4 whistles or until the rice is cooked.
5. Remove the lid. Add sugar and milk.
6. Stir well.
7. Add the cardamoms, saffrons, almonds, cashew nuts, raisins, cherries and walnuts.
8. Stir once, gently.
9. Serve.
