Fried Fish with Chili Shrimp Paste Sauce

Ingredients:
Whole Fish – 1, about 1 kg, scaled and cleaned
Oil for deep frying

For Chili Shrimp Paste
Dried Red Chillies – 7 to 10, soaked in water, deseeded and finely chopped
Garlic – 100 gms, minced
Small Onions – 100 gms, sliced
Dried Shrimp Paste – 1/2 tblsp
Oil – 3 tblsp
Fish Sauce – 1 tsp
Sugar – 1 tsp
Kaffir Lime Leaves – 5, finely sliced

Method:
1. Make incisions about 1/2 inch apart along the back of the fish.
2. Heat 3 tbslp oil in a pan over high heat.
3. Fry the dried red chillies, garlic, onions and shrimp paste until fragrant.
4. Add the fish sauce and sugar.
5. Fry for 2 minutes and keep aside.
6. Dry the fish and deep fry in hot oil until cooked.
7. Serve the fish topped with the chilli shrimp paste.
8. Garnish with lime leaves.
