Prawn Fried Rice

Prawns – 300 gms, peeled, deveined
Rice – 500 gms, cooked
Spring Onions – 1 cup, chopped
French Beans – 3/4 cup, chopped
Oil – 2 tblsp
Garlic – 4 to 6 cloves, minced
Eggs – 3 to 4
Soy Sauce – 2 tblsp
Black Pepper Powder – 1 tsp
Salt – 1 tsp

1. Heat oil in a pan over medium flame.
2. Add the garlic and stir-fry until lightly browned.
3. Add the spring onions and french beans. Cook for a minute or two.
4. Break the eggs and stir for 30 to 45 seconds or until set.
5. Then lightly scramble the eggs.
6. Add the prawns and cook for 2 minutes.
7. Add the soy sauce, salt, pepper powder and rice.
8. Mix well and cook for 2 to 3 minutes or until prawns are fully cooked.
9. Remove and serve hot.

Note: Add vegetables of choice.
