Szechuan Shrimp

A delicious Chinese stir-fry dish often served with rice. Ideal for dinner or lunch.
Szechuan Shrimp

Ingredients:
Jumbo Prawns – 10 to 12, peeled, deveined
Spring Onions – 2 tblsp, sliced + extra for garnishing
Tomato Ketchup – 3 tsp
Corn Flour – 1 tsp, mixed with 2 tblsp water
Soy Sauce – 1 1/2 tsp
Honey – 1/2 tsp
Ginger Garlic Paste – 1/2 tsp
Red Chilli Flakes – 1 tsp
Oil – 2 tsp + 1 tsp

Method:
1. Mix the corn flour paste, tomato ketchup, honey, red chilli flakes, ginger garlic paste, soy sauce and 3 tblsp of water in a bowl.
2. Heat 2 tsp oil in a pan over medium flame.
3. Add the shrimps and stir-fry for 2 to 3 minutes.
4. Remove and keep aside.
5. Add 1 tsp oil to the same pan.
6. Add the spring onions and stir-fry for a 20 seconds.
7. Add the sauce and the shrimps.
8. Stir well until evenly mixed.
9. Cook until the sauce has thickened.
10. Remove from flame and garnish with spring onions.
11. Serve hot with rice.
