Semolina (Sooji) Vada

Ingredients:
Mustard Seeds – 1 tsp
Semolina (Sooji) – 3 cups
Cashewnuts – 10
Cumin Seed Powder – 1 tsp
Pepper Powder – 1 tsp
Asafoetida – a pinch
Ghee – 4 tsp
Onion – 1/2 cup, chopped
Ginger – a small piece
Green Chilli – 6
Coconut – 2 tblsp, grated
Sour Butter Milk – 2 cups
Curry Leaves – 2 tsp, chopped
Oil – for deep frying
Salt to taste

Method:
1. Dissolve semolina in buttermilk and let it soak for an hour.
2. Pour ghee in a pan and add mustard seeds.
3. Once the mustard splutters, add cashewnuts.
4. Fry the cashewnuts.
5. Add ginger, onion, curry leaves and chilli.
6. Mix the fried ingredients, pepper powder, cumin powder, salt and asafoetida along with soaked semolina.
7. Stir them well.
8. Make small balls of the ingredients and prepare crisp vadas.
9. Serve hot with chutney.
