How to use the calculator

Dry pasta weighs less before cooking because it absorbs water. Fresh pasta already contains more moisture, while filled pasta includes its filling in the weight. That is why the calculator uses different starting portions for each type rather than treating every pasta product as interchangeable.

The sauce estimate is also a starting point. Long pasta with a light oil-based sauce needs a different amount from short pasta served with a thick tomato sauce. Filled pasta can also need less sauce because the filling already provides flavour and richness. Keep some pasta cooking water before draining. A little starchy water can loosen a sauce and help it coat the pasta without simply adding more sauce.

Side dishes matter as well. If you are serving garlic bread, salad, vegetables, meat, or several courses, people may eat less pasta than they would from a one-dish meal. Use the side-course setting when pasta is only one part of a larger menu.
