Kerala Avial Recipe

Avial is a popular and traditional South Indian dish. Made with an assortment of vegetables, coconut and curd, this is often served as an accompaniment to rice dishes or served with adai.
Kerala Avial
Drumsticks – 1 or 2, cut into 1 inch pieces
Beans – 1/4 cup, chopped
Carrot – 1/4 cup, chopped
Karamani (Cowgram) – 1/4 cup
Raw Banana (Plantain) – 1/4 cup, chopped
Pudalangai (Snake Gourd) – 1/4 cup, chopped
Mango – 1, stoned, chopped into 1/2 inch pieces
Curd – 2 cups
Coconut Oil – 50 ml
Curry Leaves – few
Salt as per taste

Grind together:
Coconut – 3 to 4 half inch pieces
Green Chillies – 2 or 3
Cumin Seeds – 1/2 tsp

1. Add all the vegetables to a pan.
2. Add salt and little water.
3. Gently boil till tender.
4. Add the ground coconut mixture and stir well.
5. Cover the pan with a lid and simmer for 15 to 20 minutes.
6. Add the curd and mix well.
7. Finally, add coconut oil and curry leaves.
8. Stir to mix all ingredients evenly.
9. Remove after a minute and transfer to a serving bowl.
10. Serve hot with rice.

Tip: You can also add green peas, if desired.
