Thatta Payir (Cowpea) Vadai

Thatta Payir (Cowpeas)
Ingredients:
White Thatta Payir (Cowpeas) – 1 cup
Ginger – 1/4 inch piece, peeled
Green Chillies – 4
Cumin Seeds – 1/4 tsp
Mint Leaves – few
Onion – 1, chopped
Oil as required
Salt as per taste

Method:
1. Soak the cowpeas for 6 hours and drain well.
2. Grind together with salt, green chillies, cumin seeds, ginger and mint leaves.
3. Add chopped onions and mix well.
4. Shape into small-medium vadas.
5. Heat oil in a frying pan.
6. Fry the vadas till golden brown.
7. Remove and serve.
