Penne with Garlic Tomato Sauce
Penne Pasta – 225 gms, cooked as per packet instructions
Ripe Tomatoes – 3, peeled, chopped
Garlic – 1 or 2 small cloves, crushed
Dry Red Chillies – 1, small, chopped
Extra-Virgin Olive Oil – 1 1/2 tblsp
Parsley – 2 tblsp, chopped
Salt as per taste
Black Pepper Powder as per taste

1. Heat olive oil in a pan over medium flame.
2. Add the tomatoes, garlic, red chillies and parsley.
3. Saute well and simmer for 30 minutes.
4. Sprinkle salt and pepper.
5. Mix well and spoon over the cooked pasta.
6. Gently mix once or twice.
7. Serve at once.
