Avakaya Pachadi
Sour Mangoes – 10, washed, pat dried
Fenugreek Seeds – 100 gms
Chickpeas – 100 gms
Mustard Powder – 200 gms
Red Chilli Powder – 250 gms
Turmeric Powder – 1 tsp
Gingelly Oil – 500 ml
Salt – 1 cup, powdered
Asafoetida Powder – 1/2 tsp

1. Chop the mangoes into 8 pieces each.
2. Keep them under the sun for an hour and remove.
3. Combine the red chilli powder, turmeric powder, salt, fenugreek seeds, chickpeas and asafoetida powder in a large bowl.
4. Add the mangoes and mix well.
5. Transfer to a clear, sterilized jar and pour the oil on top.
6. Cover with a clean, white cloth and keep aside for 10 days.
7. Shake well once every day for 10 days.
8. Serve with curd rice or as desired.
