Spinach (Palak) Pulao

Spinach (Palak) Pulao
Basmati Rice – 250 gms, cooked
Mint Leaves – handful, chopped
Spinach Leaves – 1 cup, finely chopped
Onion – 1, chopped
Garam Masala Powder – 1 tsp
Green Chillies – 2, finely chopped
Raisins – 10
Cashewnuts – 10
Pistachios – 10
Ghee – 100 ml
Salt as per taste

1. Heat ghee in a pan.
2. Saute the mint leaves, spinach leaves, onions, green chillies, garam masala powder and salt for 3 to 5 minutes.
3. Fry the cashewnuts, raisins and pistachios in little ghee and keep aside.
4. Transfer the rice to a broad pan and add the spinach mixture.
5. Mix well.
6. Add the fried cashews, raisins and pista.
7. Stir gently and serve at once.
