Peerkangai Muttai Poriyal (Ridge Gourd and Egg Stir Fry)
Ingredients:
Eggs – 4
Peerkangai (Ridge Gourd) – 250 gms, peeled, chopped
Onions – 2, chopped
Green Chillies – 1, chopped
Pepper Powder – 1/4 tsp
Salt as per taste
Oil – 1 tsp
Mustard Seeds – 1/4 tsp

Method:
1. Heat oil in a pan.
2. Fry the mustard seeds for 30 seconds.
3. Add chopped onions and green chillies.
4. Cook for a minute or two.
5. Add the peerkangai pieces and pour 1/4 cup of water.
6. Add salt.
7. Simmer until all water has evaporated and peerkangai is tender.
8. Sprinkle pepper powder and stir well.
9. Break the eggs and stir to combine all ingredients.
10. Cook for a minute or two.
11. Serve hot.
