Tangy Tamarind Shrimp
Shrimps – 300 gms, peeled, deveined
Onion – 1, small, sliced
Sugar – 1 tsp
Tamarind Extract – 3 to 4 tblsp, thick
Oil – 2 tblsp
Small Onions (Shallots) – 5 to 6, peeled
Dried Shrimp Paste – 1/4 tsp
Dry Red Chillies – 10, deseeded, cut into small pieces, soaked in water for 15 minutes
Salt as per taste

1. Grind the chillies, small onions and shrimp paste in a blender to a smooth paste.
2. Heat oil in a pan.
3. Stir-fry the ground paste for 5 minutes or until the oil starts to float to the surface.
4. Pour the tamarind extract and cook for 5 minutes.
5. Add the shrimps and sliced onions.
6. Cook over low flame for 10 minutes.
7. Add sugar and salt.
8. Fry for another 2 to 3 minutes.
9. Remove and serve hot.
