shrimp pasta - Pasta with Shrimp and Sun-Dried Tomatoes
Pasta (linguine or any other variety) – 225 gms, cooked as per packet instructions
Sun-dried Tomatoes – 100 gms, drained, finely chopped
Almonds or Peanuts – 3 to 4 tsp, chopped
Extra-Virgin Olive Oil – 2 tblsp
Shrimps – 8, cooked
Garlic – 2 cloves, minced
Feta Cheese – 50 gms, crumbled
Mint Leaves – 1 tblsp, finely chopped

1. Heat a pan over medium flame.
2. Saute the almonds for 3 to 4 minutes and keep aside.
3. Add the tomatoes and olive oil to the pan.
4. Add the shrimps and garlic.
5. Cook for a minute.
6. Add the tomatoes and remove the pan from flame.
7. Add the pasta, cheese and mint leaves.
8. Sprinkle the nuts on top.
9. Serve.
